Irish Soda Bread

I had wanted to make Irish Soda Bread last week and was tempted to buy the $2 special at the store. But I am SO glad I waited to make this recipe instead. It is easy, fairly quick and the results were well worth the wait.

Here is what is looked like before I put it in the oven...
...and here is the after picture. It expanded more than I thought it would!
I did have to bake it for almost 50 minutes as it didn't seem done after 40 minutes. 
(this may be because of the high altitude or just my crazy oven!)

 Now for the real test - does Bryan like it?!?
Yeah - A happy husband! For as they say, "the way to a man's heart is through his stomach." =)

Signs of Spring

At Christmas, Bryan's Aunt Susan gave us some paper white bulbs. After two or three weeks of faithful watering they BLOOMED! Such a beautiful sight when everything else is still pretty brown in Colorado.
